This week&#;s recipe for my Martha Stewart Cooking Challenge is for Martha Stewart&#;s Zucchini Applesauce Bread.

This quick bread recipe is perfect for summer because it is a delicious way to use up your garden fresh zucchini.

I have taken a few weeks off from my Year of Martha Stewart Cooking Challenge, but I am back with a delicious recipe for zucchini applesauce bread.

I will fully admit that I tried this bread because I was curious.

I love applesauce bread. It is a delicious old-fashioned quick bread that uses basic ingredients.

I have a gluten-free applesauce bread recipe that I make all the time. I also have a zucchini bread recipe that we make every summer. But I have never thought to combine the two flavors.

Leave it to Martha Stewart to change it up in a new and interesting way.

I changed this recipe up slightly. The original recipe called for part spelt flour and part regular flour. I am sure spelt flour would be delicious in the recipe, but I needed to make it gluten-free and spelt flour is not gluten-free.

Instead of using 1 cup spelt flour and 1 cup all-purpose flour I used 2 cups Bob&#;s Red Mill 1 to 1 gluten-free baking flour.

That worked fine for a gluten-free version. If you are not gluten-free I would use part spelt and part all purpose flour or use all all-purpose flour.

My husband and I really like this zucchini applesauce bread. It tasted a little healthier than a lot of quick bread recipes. It definitely tasted more like something you could eat for breakfast instead of just for dessert.

My kids ate the bread fine, but none of them loved it. They are fairly typical teens and college kids and they prefer quick breads to be more dessert like. As in they like them light, fluffy, sweet, and cake like.

This bread is delicious, but it does lean towards a healthier type of quick bread. Although it does still have quite a bit of sugar in it.

Martha Stewart Zucchini Applesauce Bread

Martha Stewart's Zucchini Applesauce Bread is a delicious way to combine to great flavors. It is also easy to make gluten free.

Total Time1 hour10 minutes

Ingredients

  • 2 cups all purpose flour or Bob's Red Mill 1 to 1 Gluten Free Flour ( see note below )
  • 2 3/4 teaspoon baking powder
  • 1 teaspoon salt
  • 3/4 teaspoon ground cinnamon
  • 3 eggs
  • 1/2 cup oil
  • 1/2 cup unsweetened applesauce
  • 1 1/4 cup sugar
  • 3 cups grated zucchini
  • 2 teaspoons vanilla extract
  • 3/4 cup chocolate chips, optional

Instructions

  1. Preheat oven to degrees.
  2. Grease a 5x10 inch loaf pan. and set aside.
  3. In a bowl combine flour, baking powder, salt, and cinnamon. Set aside.
  4. In a large bowl whisk together eggs, oil, applesauce, sugar, zucchini, and vanilla.
  5. Stir in flour mixture. Stirring just until combined.
  6. Stir in chocolate chips is using.
  7. Spread batter into prepared loaf pan.
  8. Bake for minutes or until toothpick inserted into center comes out clean.
  9. Let cool for minutes. Remove to wire rack to finish cooling.

Notes

The original recipe called for 1 cup spelt flour and 1 cup all purpose flour. 2 cups regular flour or 2 cups Bob's Red Mill 1 to 1 gluten free flour blend can be used as well.

The original recipe also called for 4 ounces bittersweet chocolate. I prefer to leave them out or to use 3/4 cup chocolate chips.

Fans Are Loving Martha Stewart's Apple Cider Doughnut Cake: "It's Absolutely Delicious!"

Even if the leaves aren't quite changing colors yet, we're getting obsessed with the fall flavors we love most, from savory to sweet (or, when it comes to pumpkin, savory and sweet). Whether that means putting a veggie-packed sheet-pan dinner in the oven or mixing up a healthier take on a fall coffee classic, we'll add a taste of fall anywhere we can fit it. And this cake recipe from Martha Stewart is about to take things up a notch. 

Stewart's Apple Cider Doughnut Cake is a surefire way to add some fall spice to your life (and make your kitchen smell incredible). This Bundt cake is made with applesauce, vanilla and cinnamon, packing it with all the apple cider sweetness and spice we love. Plus, the mixing part of this recipe is all done in just one step&#x;once the dry ingredients are sifted together and the wet ingredients are combined in a bowl, you can add your egg mixture to your flour mixture, whisk to combine and pour your batter into a prepared Bundt pan.

Actually preparing the pan correctly may be the toughest part of making a delicious cake like this one, but we have a few tips to help you along the way. One of the best ways to set yourself up for success is to use a high-quality Bundt pan, like this classic one from Nordic Ware (buy it: $38, Williams Sonoma). Then be sure to coat your pan liberally with a mix of butter and flour for the easiest possible release (and prettiest possible cake).

Once your cake has been in the oven for about 50 minutes, it should be ready to come out. Stewart finishes the cake with a dusting of cinnamon sugar, which gives it the look and texture of a huge apple cider doughnut.

Commenters were quick to compliment the recipe, whether they'd made it once or several times. "I make multiples and freeze them," one person wrote. "This is a neighborhood favorite. Was just thinking last night it's time to make this cake!" Others called it out as a recipe they return to year after year, including one home cook who wrote, "This is my mom's favorite that I make from your magazine every fall!"

The first, and most essential, step you’ll want to take is pre-heating your oven to degrees Fahrenheit. Then, coat an 8×8 inch baking dish with butter. Up next, you’ll want to stir together the brown sugar, cinnamon, and salt, while in another larger bowl, you’ll toss apples with vinegar, cider, and honey. Once your apple mix is complete, spoon 1/3 of the mixture into the baking dish, then add 1/3 of the sugar mix overtop.

Next, you’ll want to toss your bread cubes of choice in with butter and your remaining cider, and add this bread mixture on top of the apple/ sugar mix already in the baking dish. Then, it’s time for some layering — adding 1/3 of the apple mixture, then 1/3 of the sugar mixture, followed by the bread cube mix.

Finish off the baking dish mix with the final sprinkles of your sugar mixture and some almonds, before adding a loose cover of parchment-lined foil. Bake the entire dish until the apples at the center of the mixture are tender, and those along the sides are bubbling. Remove the parchment foil cover and bake until the top is nice and crisp. Finally, let the Raisin-Challah Apple Betty cool before dishing it out with your favorite brand of vanilla ice cream. With this recipe, you’ll be the toast of the apple orchard!

Enter the six-ingredient apple pie cake. Just six ingredients, most of which you probably already have in your pantry, such as flour, sugar and cinnamon. And, as for the star of the dish (apples), most of us have a bushel of those on hand as well, thanks to apple-picking season and can&#;t-miss apple sales at the grocery store.

This easy recipe from Martha Stewart proves that you can make miracles happen in the kitchen with just the basics. Gather up your flour, butter, brown sugar, cinnamon, apples and lemon juice—and prepare yourself for a delicious treat in about an hour and a half! Get the recipe here.

The beauty of this recipe is that it only calls for six ingredients, but you can certainly ad-lib as you see fit. For example, you can make your apple pie cake extra-seasonal by using pumpkin pie spice instead of cinnamon. (Pumpkin pie spice is simply nutmeg, cinnamon, allspice, ginger and cloves mixed together). You can also add vanilla to the crumb mixture to give it a richer taste. You could even add nuts to the top of the cake to give it added texture and depth, or raisins for an added twist.

This recipe for Apple Cinnamon Walnut Loaf is exactly that. It&#;s cozy, packed with seasonal flavors, and great to make ahead to bring to your holiday gatherings.

Apple Cinnamon Walnut Loaf

Apple Cinnamon Walnut Loaf

Yields one loaf (8 slices) &#; can easily be doubled!

Ingredients:

  • 1/4 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1 1/2 all purpose or whole wheat flour
  • 1 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1/2 cup + 2 tbsp buttermilk
  • 1 cup diced apple
  • 1/2 cup chopped California Walnuts

Directions:

  1. Preheat oven to degrees.
  2. In a large bowl, beat together butter and sugar until creamy.
  3. Beat in the egg and vanilla.
  4. In a separate bowl, combine flour, baking soda, baking powder, cinnamon & salt.
  5. Add dry ingredients to butter mixer and beat together.
  6. Slowly add buttermilk and beat just until everything combined.
  7. Fold in apples and walnuts.
  8. Pour batter into greased loaf pan and bake for minutes, or just until a toothpick comes out clean.
  9. Let cool for at least 30 minutes before slicing.
